For Cancun my bride and I enjoyed the Park Royal Cancun, 15 miles from the airport and you can catch a public bus after you pass through Mexican Customs. A taxi ride will cost you $25.00, the bus $6.00.
We liked the organization so well we joined. This is a real class operation. They are All-inclusive. One price and you are all set for your vacation.
In Playa del Carmen I would stay at the Hacienda Vista Real, 35 miles form the Cancun airport. Once again the public bus system is first class from the airport to Playa del Carmen and the cost would run you $8.00 one-way and take a little over an hour. A taxi ride is closer to $45.00 one-way.
Now for a real treat stay on Cozumel at the Park Royal. The All-inclusive is top rate, the location is right on the Caribbean Sea and the accommodations are first rate. To get there from the Cancun airport is the same as Playa del Carmen, you take the bus from the airport to Playa, and within three blocks you'll find the Cozumel Ferry. The Ferry departs from Playa to Coz every hour from 5am until 11PM daily. The taxi ride on Coz to the Park Royal is $4.00.

Depends on what your looking for.
The Riu chains are really nice.
They have things for everybody. There is a lot to do at the hotel (entertainment) and a lot to see.
Great service from the people who work there (reception, bar, cleaning, animation....)
I personally think the Riu hotels are very good!

Try the Riu Palace Mexico if you want to relax more and try the Riu Tequila or the Riu Yucatan or Playacar if you want more action and entertainment. But if you have a Palace bracelet, you can visit all the hotels from Riu. (If you stay in Playa del Carmen you can also go and visit the Riu hotels in Cancun, I can recommend that too!)

this is a all inclusive resort about 10 minutes south of playa del carmen called Occidental Grand Xcaret. if you stay here you get to go to the ecological park right next door to the hotel where you can go snorkeling, swim with dolphins, go on a sea walk(the big oxygen tank on your head and you walk on the sea floor), there are also many beaches here.
