What is your favorite homemade salad dressing to use on Feldsalat???


Mine is plain white vinegar and olive oil with salt and pepper, but I麓m hoping to get another recipe to use tonight for dinner.

One of my favorite salads in Germany was Feldsalat (Lamb's lettuce or m芒che) with my Mom's wonderful jogurt dressing.

Here is the recipe for the dressing and the salad:
Ingredients

* 陆 lb / 250g m芒che / lamb's lettuce, cleaned
* 陆 cup / 125ml yogurt or kefir
* 陆 clove garlic, minced
* 陆 tsp dijon mustard
* 1 tsp creamed horseradish
* 陆 tsp salt (or to taste)
* 陆 tsp sugar (or to taste)
* 2 tbsp olive oil
* 1 tbsp white wine vinegar
* 1 tbsp parsley, chopped
* 陆 tbsp chives, chopped
* fresh ground black pepper to taste
* radish as garnish (optional)

Preparation

1. Combine yogurt or kefir, garlic, mustard, horseradish, salt, sugar, olive oil, and vinegar. Mix well.
2. Stir in parsley and chives and adjust seasoning with salt and pepper.
3. Toss lamb's lettuce with dressing. Serve.
4. Optional: Thinly slice radishes and use as garnish.

I'm simply using white vinegar (white Balsamico, if you have), sunflower oil (or canola, "Raps" in German); sea salt with spices ("Kr盲utersalz"), white pepper and fresh garlic (all just a slight amount). Mix and let rest, and refine with croutons. You can buy them readymade or, better, make them yourself from toast bread or any other bread you have, and make them small and crunchy. Give them into the dressing shortly before serving. I'm sure your friends will like it.

Most important: Neither the Feldsalat nor the dressing should be fridge-cooled. Some people even say the dressing should be lukewarm; that's a point where I don't agree. The dressing is good at room temperature, the salad can be a bit cooler.

My favorite dressing for ANY salad is as follow:
4 EL Oliven枚l
2 EL Aceto Balsamico
Salz & Pfeffer
1/2 TL Zucker

This one is also awesome, especially with Feldsalat.
My Oma made this always:
Feldsalat mit Speckso脽e
Feldsalat mit lauwarmem Dressing mit Speckw眉rfeln

Zutaten f眉r Portionen 250 g Feldsalat
150 g Speckw眉rfel
1 Pr Pfeffer
1 Pr Salz
2 EL Wei脽weinessig
1 gr Zwiebel
1 EL Oliven枚l

Oil, vinegar, and chopped onions.
