Hamburg for just one day in mid august: what not to miss (We love saunas/spas any suggestions?).?

Hamburg isn't exactly in spa country (the central and southern parts of Germany are well known for their thermal spring spas) but there are several options for you to consider. I've stayed in two hotels that have excellent spa and wellness facilities. Number one is the Amrita Spa in the Four Seasons Hotel. Number two is a spa called the "Energy Clinic" which is inside the Kempinski Hotel Atlantic. Both hotels are very good, indeed. You may want to look them up online and consider them for your stay, but you needn't be a hotel guest to use them.

As far as the rest of Hamburg goes, you may just want to explore on your own. It's not a typical tourist city, but has some interesting neighborhoods and museums. Getting out of town and seeing the North Sea coast might be a good bet.

I've heard that his is quite good, haven't been myself, though.
