Corona de Castilla is one of the best... We attended a wedding there. The Landa Palace on the outskirts of the city, just off the main road, is also very nice. I've friends that stay there every time they drive north.
Near the cathedral, you will also find a TRYP hotel (a good spanish chain of hotels) and also an NH hotel, (also a chain).
There are several smaller hotels also of excellent quality. The ones I've named are all 4 star hotels.
May I give you warning... Burgos in winter is one of the coldest cities in Spain!! Take plenty of warm clothing with you!
